Ingredients for your winter saffron soup
Most of the ingredients you’ll need should be readily available from your local supermarket or deli, and of course the saffron can be purchased at SaraSaffron.com:
- A good pinch of good quality negin saffron threads
- 25g butter or vegan alternative
- 3 cloves of garlic, finely chopped
- 2 sticks celery, chopped
- 1 medium onion, chopped
- ½ leek, chopped
- 4 large carrots, peeled and chopped
- 1 large potato, peeled and chopped
- 1 chicken or vegetable stock pot/cube
- Salt and pepper to taste
- Squeeze of lemon
How to make your saffron soup
Steep a pinch of saffron in a cup with about an inch of hot water and set aside to give it a chance to develop the flavour and release its aroma.
Whilst the saffron is steeping, preheat a large pan on medium heat and add butter or vegan alternative. Add the garlic, celery, leek and onion into the pan and stir whilst cooking on a gentle heat until the garlic and onion becomes soft. Toss in 4 chopped carrots and 1 skinned, large, chopped potato, adding just enough water to cover the vegetables and increase the heat to bring to the boil. Stir in the stock and saffron water that was put aside from earlier, covering the pan with the lid and reducing the heat to simmer softly until the vegetables are tender.
Leave to cool a little, then blitz with a hand mixer before adjusting the seasoning to taste by adding salt, a good grind of pepper and a dash of lemon if liked. Serve topped with plain yoghurt and a sprig of parsley and enjoy this truly winter-warming saffron soup.
