Using saffron in your next cake bake
Saffron is a superb addition to many recipes. While used for its flavour, it is also commonly used for its gorgeous yellowish-orange colour. Many people have heard of saffron rice, and we’ve shared a recipe on that elsewhere on this site.
However, if you’re looking for a recipe on how to make saffron cake, you may be surprised to see we’re not going to list one here. There’s a good reason for that. Saffron can be used in many cake recipes, imparting both great flavour and vibrant colour wherever you use it. Of course, you wouldn’t put it in any recipe that produces a darker cake. The colour would be completely lost in a chocolate cake, for example.
There are plenty of saffron cake recipes to explore
When you begin looking at the possibilities, you’ll find lots of cake recipes that make use of saffron to try:

These are just a handful of the many recipes we have in our extensive saffron recipe book. Some are traditional cakes, using eggs and flour to create the basic cake batter. Others veer more into loaf cakes, adding yeast to encourage them to rise. The Cornish saffron cake is an excellent example of this.
Is saffron always the star of a cake recipe?
Not always, but in cases where it doesn’t appear as the main ingredient, it tends to appear in tandem with something else. We have a recipe for orange and saffron mini cakes, plus another pairs saffron with cardamom to create something else again.
Another element to think about is whether you want to bake an entire cake or turn the mixture into buns or individual cake bars or even muffin-style cakes. This may take a little experimenting to get the best results. Some of our recipes do give you ideas on this, but if you’re going to try it, reduce the cooking time and keep an eye on them while they’re in the oven.
